This healthy Mars bar slice is to die for! It’s literally one of my favourite recipes :) I hope you enjoy it xx

BASE INGREDIENTS

  • 1 cup almonds
  • 14 fresh medjool dates
  • 1 scoop Shape Health protein superfood (can omit – if not using, you will not need to add water)
  • 1 tbsp. cacao powder
  • 3 tbsp. water

FILLING INGREDIENTS

  • 1 can coconut cream
  • 8 fresh medjool dates
  • 1 tbsp. coconut oil
  • 1 tsp. vanilla
  • 1 tsp. cacao powder
  • 1 pinch salt

TOPPING INGREDIENTS

  • 3 tbsp. melted coconut oil
  • 3 tbsp. cacao powder
  • 3 tbsp. rice malt syrup (or sweetener)

METHOD

  1. Blend the almonds in a food processor, add the remaining ingredients (besides water), and blend well.
  2. Add water, 1 tablespoon at a time, until it starts to stick together. You want it to be sticky but still a little crumbly.
  3. Press into the base of a pan and put in the freezer
  4. Heat all the filling ingredients in a saucepan over low heat (this will take up to 20 minutes), stirring continuously. When all the dates have melted and it starts thickening, this is when it is ready.
  5. Allow to cool, and then pour over the base. Put in the freezer for 1 hour.
  6. Mix the topping ingredients in a small bowl and pour over the slice.
  7. Allow it to set in the freezer for at least 3 hours before cutting.
  8. Store in the freezer and remove 5–10 minutes before serving.
It makes 12 slices.

  1. Hi! I’m wondering if you chopped or pureed the dates before melting them. Also did you use a can of coconut milk using only the cream once separated? Thank you! Can’t wait to make this!

    1. Hi Andrea, I just chopped up the dates using kitchen scissors. And I used the whole can of coconut cream, but coconut milk would also work :) I hope you enjoy it! xx

  2. I had trouble with the topping I melted the coconut oil & added it to the other ingredients I couldn’t get it to combine the coconut oil separated from the other ingredients any advice

    1. Hi Lyn, I’ve never had these troubles. I melted my coconut oil so that it was a complete liquid (not just soft) and stirred it really well. If you let it sit, it might separate. So I would stir it really well and then pour it straight on :) xx
